Explore what defines artisan food, including craftsmanship, traceable ingredients, traditional methods and responsible use of local products in restaurant menus.

Artisan Foods and Culinary Craftsmanship
By Chef Ahmet Özdemir
Artisan foods are produced through skilled, small-scale or tradition-based methods in which the maker’s knowledge has a direct effect on quality. Bread, cheese, charcuterie, preserves, confectionery and regional dishes may all be artisan products.
What defines artisan quality?
The label should reflect real craftsmanship, traceable ingredients and a meaningful production method. Small scale alone does not guarantee quality, and industrial products should not be marketed as artisan without justification.
Restaurant value
Artisan products can strengthen local identity and support producers. Restaurants must evaluate consistency, food safety, delivery capacity and cost before adding them to menus. The producer’s story should be communicated accurately.
Culinary craftsmanship remains valuable because it preserves practical knowledge while allowing controlled innovation.
