What Is Kobe Beef?

Kobe beef is a protected regional brand of Japanese Wagyu, not a general name for all highly marbled beef. Authentic Kobe beef comes from Tajima-line cattle raised and certified under strict rules in Hyōgo Prefecture, Japan.

Wagyu and Kobe are not the same

Wagyu means Japanese cattle and includes several breeds and regional brands. Only beef that meets Kobe certification standards may legally be sold as Kobe beef. Documentation, origin and traceability are therefore essential.

Quality characteristics

Kobe beef is known for fine intramuscular fat, tenderness and a rich mouthfeel. Because it is intense, portions are often smaller than standard steak portions. Gentle heat and careful cooking help control fat rendering.

Restaurant responsibility

Menus should never use the Kobe name without verified supply records. Terms such as Wagyu-style or crossbred Wagyu must be accurate. Through professional menu consulting, product claims, portioning, pricing and cooking standards can be aligned.

Stories about massaging cattle or preventing them from walking should not replace verified production information. Authenticity begins with certification.
