Tomatoes, peppers and potatoes originated in the Americas and entered European and Ottoman food systems after transatlantic exchange. Their adoption was gradual. Over time, they became so integrated into Istanbul and Turkish cooking that many modern dishes are difficult to imagine without them.
From unfamiliar products to everyday ingredients
New ingredients spread through trade, gardens and changing agricultural practice. Acceptance depended on availability, taste and the ability to fit existing cooking methods. Tomatoes strengthened sauces and stews, peppers added color and heat, while potatoes became a flexible accompaniment and filling.
Culinary culture is dynamic
Their history shows that cuisines are not static. A product can arrive from abroad and, through generations of local practice, become part of regional identity. This does not erase its origin; it demonstrates the creative power of culinary adaptation.
Restaurants presenting historical Istanbul cuisine should consider period accuracy. A dish described as medieval or early Ottoman should not automatically include ingredients introduced later. Careful research strengthens both menu credibility and guest education.
