Evliya Çelebi’s seventeenth-century travel book is one of the richest narrative sources for Ottoman geography, social life and food culture. His descriptions include markets, public kitchens, palace service, military provisioning, regional products, craftspeople, celebrations and hospitality.
A wide culinary geography
Because Evliya traveled across a vast area, his work records considerable regional diversity. He mentions breads, meat dishes, fish, rice, soups, fruit, sweets, sherbets, coffee and many local specialties. These observations show that Ottoman food culture was shaped by climate, trade, urban wealth and community traditions.
Kitchens, trades and hospitality
The travel book is especially valuable for its attention to professional trades and public life. Bakers, cooks, confectioners, sherbet makers and market sellers appear alongside charitable kitchens and household tables. Food is presented not only as nutrition but also as status, generosity and identity.
